The short answer

Yes. Cast iron works on induction because it is magnetic, and induction cooktops heat magnetic metal. The pan needs a flat base that sits fully on the cooktop. Kroslo’s kadhai, dosa tawa and fry pan are listed for gas, induction and all cooktops.

Why it works

An induction cooktop does not make a flame. It creates a magnetic field, and that field heats any pan that is magnetic. Iron is magnetic. So a cast iron kadai, tawa or fry pan heats up quickly and holds the heat well.

A simple test: hold a fridge magnet to the bottom of the pan. If it sticks firmly, the pan will work on induction.

What to check before you buy

  • A flat base. The base must touch the cooktop all the way across. A round-bottom kadai will not heat well on a flat induction plate.
  • The size. A pan much smaller than the ring heats unevenly. Match the pan to the ring where you can.
  • The product listing. Look for "gas, induction and all cooktops". Kroslo's Kadhai, Dosa Tawa and Fry Pan pages say so.

How to use cast iron on induction

  1. Start on medium heat. Induction heats fast. Let the pan warm for a minute or two before you add food.
  2. Do not heat it empty on high. This is hard on any pan.
  3. Avoid sudden temperature changes. Do not move a hot pan straight into water or the fridge.
  4. Lift, don't slide. On a glass-top induction cooktop, lift the pan instead of dragging it.
  5. Use the right ring. Put the pan in the centre.

What does not work on induction

Pans made only of aluminium, copper, glass or ceramic will not heat, because they are not magnetic. Some of these have a steel disc on the base so they work. The listing will say "induction base".

FAQs

Can cast iron kadai be used on induction?

Yes, if the base is flat. Cast iron is magnetic, so it heats on induction.

Does a cast iron tawa work on induction?

Yes. Use medium heat and let it warm before you add batter.

Can we use a cast iron dosa tawa on an induction stove?

Yes. Kroslo's Dosa Tawa is listed for gas, induction and all cooktops.

Can cast iron be used on a glass-top electric stove?

Usually yes, with care. Lift the pan, don't slide it, and check the maker's advice.
